VitaMatcha Pancakes
Ingredients:
- 40g coconut flour
- 1 tbsp VitaMatcha
- ¼ tsp baking powder
- 6 egg whites
- 125ml buttermilk
- 1 tbsp honey (or maple syrup or agave nectar)
Method:
- Combine all ingredients in a small food processor or blender until well combined
- Coat a non-stick pan with cooking spray over a medium-high heat
- When pan is hot enough, slowly ladle the pancake mix into the pan cook until the top is covered in bubbles
- Very delicately flip the pancake and cook until the second side is golden
- Garnish with whatever you fancy, but we suggest a dollop of Greek yoghurt, fresh fruit & drizzled with honey
